I read a book over Christmas that I think everyone on this list might
enjoy: Designing Games

It covers many game design principles with examples from Rock, Paper,
Scissors (,Lizard, Spock), tic-tac-toe and Risk through to
Counter-Strike and Starcraft 2.
He also talks a great deal about the process of game development,
testing, level design etc.
To devolve my entirely subjective critique to Slashdot moderation
adjectives: Insightful, Funny and Informative.
Are there any books on game design/asset creation/programming that
anyone else would recommend?
For that matter, there are lots of (mostly) practically-minded youtube
tutorials on Unity, Blender, Maya etc out there, are there any really
good ones that you've encountered and would recommend?
Speaking of books, Packt publishing has a B.O.G.O.F. promotion on at the
moment celebrating their 2000th published book and they have a few game
development books on their list:
